One of the problems if a commercial kitchen does not have a thorough hood cleaning done is grease can gather on the roof top. Not only is this a potential fire hazard, it can be an environmental hazard as well. If the grease builds up and it rains or snows and the snow melts, the grease can ooze down the side of the building and run into the sewer system. The damage to the building could cost thousands and the fines and clean up fees could put a restaurant out of business.
